Easy Breakfast Buffet Casserole

1 lb Odom’s Tennessee Pride Sausage (Mild, Hot, or Sage)
1 Bag Frozen Hashbrowns
2 whole eggs
8 egg whites
2 cups of milk
2 cups of shredded Cheese
2 cups of stale whole grain bread, cubed
salt and pepper to taste
1 tsp. of dry mustard


  1. In a skillet, cook sausage until browned. Drain well and put crumbled sausage to the side in a bowl or plate. Grease an 8x12 inch or 9x13 inch baking dish. Pour the hash browns in the baking dish and spread evenly. Take your bread cubes and place all throughout the potatoes. Cover the bottom layer with 1 cup of shredded cheese. Combine eggs, milk, salt, pepper and mustard. Pour over potatoes, bread and cheese. Distribute crumbled sausage over mixture. Sprinkle 1 cup of shredded cheese over top. Cover and refrigerate several hours or overnight. * Bake at 350 degrees F for 45 to 60 minutes, until firm and lightly browned. Remove from oven and let the casserole rest for 5 to 10 minutes. It will be very hot, on the inside. Serving Size: 1/2 cup
