1 pound Odom’s Tennessee Pride Country Sausage (mild or hot)
½ cup chopped onion
1 cup chopped green pepper
2 tablespoons vegetable oil
4 cups chopped, peeled, and cooked potatoes
Salt and black pepper, to taste
- Cooked sausage in large skillet until browned. Remove with slotted spoon and drain on paper towels. Cook onion and green pepper in drippings in skillet until tender; remove and set aside. Add oil to drippings in skillet; heat. Stir in sausage, onion, green pepper, and potatoes. Cook until potatoes are browned and mixture is heated through. Add additional oil, if necessary. Season with salt and pepper. Makes 4 to 6 servings.
