1 pound Odom’s Tennessee Pride Country Sausage (mild or hot)
½ cup chopped onion
1 cup chopped green pepper
2 tablespoons vegetable oil
4 cups chopped, peeled, and cooked potatoes
Salt and black pepper, to taste


  1. Cooked sausage in large skillet until browned. Remove with slotted spoon and drain on paper towels. Cook onion and green pepper in drippings in skillet until tender; remove and set aside. Add oil to drippings in skillet; heat. Stir in sausage, onion, green pepper, and potatoes. Cook until potatoes are browned and mixture is heated through. Add additional oil, if necessary. Season with salt and pepper. Makes 4 to 6 servings.
