Tailgating “Cupcakes”


•16 ounces Odom’s Tennessee Pride Hot Country Sausage
•2 cups shredded cheddar cheese
•2 cans of regular sized flaky biscuits
•8 ounces sour cream
•Food coloring in favorite team color



Mix Odom’s Tennessee Pride Country sausage and cheese gently until well blended. Shape mixture into 40 balls of equal size. Remove biscuits from can and separate each biscuit into two layers, making 40 total biscuit layers. Press one layer of biscuit into cup of mini-cupcake pan. Repeat with remaining layers. Place sausage-cheese ball in each biscuit cup. Bake in preheated 400 degree oven for 8 to 10 minutes or until biscuits are browned and sausage balls are bubbly. Remove from oven, let cool in pan for 5 minutes.
Remove to rack to cool completely. When ready to serve, mix sour cream with enough
food coloring to make desired shade. “Frost” each sausage “cupcake” with tinted sour cream.

Yields: 40 “cupcakes”.
